I just tried to eat the Kitchen & Love Quinoa quick meal with mango & roasted pepper. I didn't like it at all. I tried as hard as I could to eat it-literally gagged over half of it down because I thought it was low-cal and good for you. No way. I have to throw the rest away. I'll eat the chicken strips instead! Ughhhh...I was hoping this was going to be good!

I made a really good quinoa dish once with roasted sweet potatoes and other veggies in butter tossed together with pecans and cranberries. Not sure how diet friendly it would be but the roasted/caramelized veggies helped make the quinoa palatable. The problem with quinoa for me is the monotonous texture and adding the other stuff made each bite different.

I make Quinoa with Asparagus, salmon, grilled red pepper, shallots, tomatoes. Sub chicken, too.

I'll have to try it again in a smaller quantity. It was just to bland. I figure I could have had a piece of chicken or fish for those calories.
