Don't you just LOVE sweet potatoes!? I make a baked dish: sliced sweet potatoes, sliced shallots, thinly sliced brussels sprouts (or chopped kale) tossed in olive oil and sea salt. Put in casserole. Sprinkle with chopped rosemary. Top with chicken thighs oiled with olive oil and sprinkled with sea salt. Bake at 350 degrees for about 45 minutes. It's absolutely wonderful. If anyone is interested in the total detailed recipe, please let me know and I will share it.
