Food Diary from Sunday/Monday:
Sunday, October 28th: Breakfast: Berry smoothie (made from 100% cranberry juice, frozen/organic strawberries, raspberries, blueberries, and a handful of spinach for extra vitamins) Snack: Natural beef jerky, handful almonds, small apple Late Lunch: Chicken salad with fajita veggies, pico de gallo and tablespoon guacamole Dinner: Chicken curry Dessert: Homemade Paleo cookie treats (made from coconut flour, almond butter, apple, banana, walnut, baking soda, cinnamon)
Monday, October 29th: Breakfast: Coffee (black) and a bowl of Fiber 1 cereal and almond milk (Not paleo, but I needed to get rid of the cereal in my house by November 1st for my 30 days of Paleo) Lunch: Leftover chicken curry Snack: Almonds Dinner: Spice rubbed crock pot chicken and onions, salad with homemade dressing, grapes Dessert: Peppermint tea and homemade Paleo cookie treat
Sunday/Mondays are my days off, and I had a relaxing weekend. Sunday, we went hiking up Slate Mountain (2 1/2 miles uphill, climbing 1000 feet to an elevation of 8200!) and had the most incredible view! At the top of the mountain, we could see huge forests, Mt. Humphreys, and on the other side, a far off view of the Grand Canyon. Overall, it was a 5 mile hike and I was exhausted, and SO sore the next morning.
Yesterday, I gathered everything I needed for my Halloween costume (Marilyn Monroe this year!) and cooked. It's always nice to just have a day at home alone to get things done.
