I started with red palm oil and minced garlic and let that warm together then I added cumin, thyme, Sumac, paprika, curry powder, cinnamon, chili powder and red pepper flakes. I used diced tomatoes as well as whole cherry tomatoes. A pinch on brown sugar mixed in. I then added sliced onions, sliced jalapeños, cut up black olives and avocado and added capers. Let it simmer till onions were soft. Added 7 eggs ( 3 for hubby, 2 for Brody and 2 for myself) sprinkle of oregano and sea salt and black pepper. Served with oven toasted Dave’s Killer Bread 21 whole grain. It was soooooo good 😋

Great minds Keyten 🤗😘💕 Hubby loves it and so do I omg it’s a wonderful dish😋😋 Brody says it’s ok but that’s because he is weird with olives and tomatoes.
