I really like the website wholesome yum for keto and low carb recipes. I ventured into the unknown today and made something outside my comfort zone - Raspberry Low Carb Chia Pudding. It supposed to sit overnight to let the chia seeds soak up the liquid but I snuck an early taste and it is good! Very different than what I am used to eating. The chia seeds are pretty much 100% fiber so it has about 6 grams of net carbs in the entire dish. The only negative is that the ingredients were kind of pricey but they will last a long, long time. The seeds are a little bit off-putting but you can mix it up in a blender or a bullet if you want it a little more creamy. Looking forward to it for breakfast!
