As part of my intermittent fasting, I have also adopted low carbs diet with a slight variation to keto ( though not very successful in full keto ). I have largely cut out rice except for a few occassions (as my elderly parents do not understand why avoid rice ). Same with bread except a pandesal or two on certain occassions. As the covid pandemic continues and not much income flow, need to cut costs and see if I can use certain ingredients at home. Found some quinoa leftover from my niece, so tried some quinoa this lunch. Though not low carb diet friendly, will use this as replacement for rice substitute when I do eat rice. Also add some variety to food menu.
