Weight is bouncing a bit again. Went out to eat last night....had 10 shrimp, some buffalo chicken and cheese dip with celery and some blue cheese dip. I know that is a lot of cheese, but I still probably had less than 4 oz. It was discouraging to see the scale move up again, though I know it has to be water weight because my inches are down this week...even though I"m only about 3 lbs lighter I've lost 1" in my bust, and 1/2" in my hips. I've got one more week of stabilization then hopefully the scale will just keep decreasing.
On a good note my stomach feels better...finally. However my sinuses are hurting ...boo. I spent most of the day in bed (didn't even get a short run in). I did make some dinner...blackened pork chops, garlic spinach, and my all time fav...Mozzarella Pasta Salad (from whole foods)...I made a modification of zucchini squash for the pasta and it tastes just as yummy :)
I also got a call for a job interview (FINALLY), it is for a job that someone I know is manager of...that is why I got the interview. But he told me in a nice way today that there were several very qualified applicants ...to tell you the truth I don't have any experience in the field so I've got a feeling I won't get the position...but I"m excited I at least have an interview.
I also found out I can file for the State of Texas unemployment (I worked for Central Texas College in Egypt)...I can get quite a bit a week (probably as much as I would get working retail, but without the stress). I asked if they could back date it to July when my deployment ended and she asked why I didn't apply sooner...I said I thought I could get a job fairly quickly (and we both had a good laugh). They have to process everything but if I"m good to go I start getting it Nov 25...woohoo...I was so worried about my savings running out.
Ok and finally here is the recipe for Whole Foods Smoked Mozzarella Pasta Salad (you can make it as is or sub the zucchini for pasta...I also added more roasted red peppers...I love them)
Ingredients
Dressing 1/4 cup grated parmesan cheese 1/2 cup chopped fresh parsley (optional) 1/2 cup mayonnaise 1/4 cup white wine vinegar 3 garlic cloves, minced 1 pinch cayenne pepper salt & fresh ground pepper, to taste
Salad 1/2 lb penne pasta 2 cups packed baby spinach leaves, washed and stemmed (can be frozen) 2 roasted red peppers, diced 1/2 lb smoked mozzarella cheese, diced
Directions
Process the dressing ingredients in food processor or blender until smooth. Cook pasta until al dente. Drain pasta in colander and run under cold water until well-cooled. In a large bowl, combine cooked pasta, spinach, roasted red peppers and smoked mozzarella. Toss the salad with the dressing then serve.
