Rainbow chard and onion with protein + rotini. NOT a blue apron. Winged this one. Came out pretty well. * make the pasta, meanwhile, back at the ranch... * separate the stems from the leaves of the chard. * rough chop the chard leaves. * dice the onion and chard stems * rough chop the garlic * add a little olive oil in a non stick pan in medium high * add the stems. Let them go for. Few mins, till softish. * add a little more olive oil. Add the onions and garlic, let that go for a while longer till soft. * salt and pepper the above. * add a little water and the chard leaves. Let them go till they’re wilted a bit. * strain the pasta and out it back in the pot. * add the veggies that you’ve been cooking. * add a little more olive oil. Juice from a lemon, lemon zest, a little water and some grated or microplaned Romano cheese. * mix it all up and you’re good to go. All and all I used 2 table spoons of olive oil and 1/2 ounce of grated cheese.
