These potatoes are great for that because you can bake them and stuff them in advance then cool them. Not only more rs but also very handy later! This is also my tip for Xmas day roasties: boiling them on xmas eve and put on a cooling rack to dry then pop in fridge overnight. More rs AND they go super crispy!

Hi Sheena, the internet probably has s better explanation than me but it is a kind of carb you get in al sorts of things like oats and lentils that your body can’t digest, so it acts as fibre but also it has a benefit for your gut microbiome and specifically ones that produce fatty acids important for gut health. By letting potatoes and rice cool before eating you increase the amount of resistant starch (already good) which as you can’t digest it also makes them lower in calories.

Hi Biene, These are super easy, bake the potatoes as you normally would, oven or microwave. Then when they are cool enough cut in half and scoop out the flesh. Add some butter or olive oil if you prefer and whatever else you like. I added la 100g lardons for 4 potatoes, grated cheddar cheese, chives and a tablespoon of dijon mustard, plus salt and pepper, but really you can do anything. Sometimes I use tinned tuna and capers. Then just spoon the mix back in and put in the fridge. To cook, 25 mins in a hot oven. A microwave would work but not give the lovely crispy top.
