In the quest for better health, I have committed Italian sacrilege: I made lasagne with tofu instead of ricotta and eggplant and zucchini in place of noodles. I'm pretty sure my ancestors are rolling over in their graves, more because of the tofu than the eggplant and zucchini. I won't know how it tastes until tomorrow as I'm letting it sit overnight in hopes the sauce and spices will flavor the tofu. Wish me luck!

Ricotta isn’t too bad at all. Great thought on supplementing the typical pasta noodles, but you may be able to get away with keeping ricotta in there. At least for me, cheese has zero ill effects and being on a keto diet, it’s one of my new go-tos. I love mozzarella slices with a tomato slice and a little balsamic vinegar or pesto sauce. Super rich and filling with nearly zero carbs/sugar!

I am not on Keto, but need to cut cholesterol. That’s my reason for substituting Tofu for the ricotta.

Obviously not a doctor, but I eat 3 eggs every morning, bacon at least once a week, and tons of cheese and my cholesterol is the lowest it’s ever been ever since I stopped eating carbs/sugar. Without getting into all the details (may be worth a google search), there are many others that have lost a ton of weight and simultaneously dropped their cholesterol on keto. I love the documentaries “Fed Up” and “The Magic Pill” that detail people using keto to eliminate diabetes, reduce cholesterol, lower blood pressure, etc. May be worth asking your doctor if it could be worth exploring... either way, best of luck!

Jershie, thanks for your concern. I am following my doctor's recommendations. There are several reasons why keto is not a good fit for me medically speaking, but I appreciate your input and wish you well on your journey.

Enjoy! Sounds delicious! I love lots of veggies! My husband had high cholesterol and his Dr. told him to fill his plate with mostly veggies. It sounds like your doing the same. It did help him! He lost 25lbs and has maintained with some fluctuations. You got this! I miss lasagne so much! I'm allergic to dairy, soy and gluten. I think I should make a version I can eat.... lol

You can also replace the ricotta with cottage cheese.

Yes Zuzu I have done that before. I didn’t feel like going to the store and I had tofu in the fridge so I decided to give it a try.

Can't wait to hear about how you like the lasagna tofu recipe as you showed above. Sounds really good actually. I have never has tofu, but brought home a small container the other day and now looking for a recipe to use it in. So now I have one.

It was delicious. Even my meat loving husband loved it. Nobody guessed that I swapped the tofu and ricotta. The only criticism I had is that it got a bit watery, probably because of the zucchini. I made sure to dry out the tofu really well so I don’t think it was that.

Dananna - Happy customers at Dananna's Diner. Thanks for the zucchini excess water alert. Easy to fix, now that you mentioned it. I'm slowly losing my own "excess". Ugh - so slow sometimes, even when wringing out every carb in the lettuce. Hope you easily achieve your goals for 2021. Wishing you a healthy year ahead.

🍀 If you like eggplant , zucchini, & tofu you should be good. Personally I couldn’t even get through spaghetti with zucchini as the “pasta”. Hope it works for you 🍀
