Have you ever made eggplant lasagna? I wake a normal lasagna but my contribution to a healthier diet— not a perfect diet— is to use lasagna noodles for one layer and thinly sliced eggplant for the second layer. I make my own marinara sauce so I can control the ingredients in it. It tastes really good. Then the key to being able to eat the normal things I like is portion control and moderation plus’s the slightly tweaked recipes.

You can also use all sliced zucchini — that is equally as delicious even without any noodles.

I suggest Wonder brand shirataki lasagna noodles. 4 carbs per serving. Amazon carries them if you can’t find them locally.

This actually looks really good. I have used miracle noodles as well - but the last lasagna I made I used the ribbon cuter on my vegi spiralizer and used zucchini and yellow squash and built the dish as normal. It isn't pasta but it scratched the itch i had for Lasagna.

I make vegetable lasagna with no pasta or maybe just one layer. A layer of veggies then a meat sauce made with ground Turkey then cheese another layer of a different veggie, then sauce (a meat sauce) then a covering of mozzarella cheese. Eggplant makes a nice layer or sometimes I use a layer of frozen mixed vegetables. It satisfies that Italiano need and is healthier without all them carbs. I make my own sauce with canned diced tomatoes and oregano, Italian seasoning, garlic powder, onion, fennel seed and some cruses red pepper for some 🔥 The fennel gives it an Italian sausage flavor
