Thought I'd share 2 simple salad tricks I have discovered - maybe someone else will get some use from them as well - one of my favorite salad dressings is Ken's Steak House Lite Caesar. Like most dressings, loaded with calories compared to the serving size. I've learned to dilute the dressing with water - it thins the dressing, reduces the calories per serving and really doesn't change the taste to any noticeable degree (don't forget, you can also whatever spices you like to help if you need a flavor boost). I've also learned to use my food processor to shred my choice of protein - typically chicken. The shredded chicken seems like "a lot more" than chunk chicken, to the point where I now use less chicken on the salad when I fix it shredded rather than chunky style...plus it gives me a little wiggle room on my protein to add a little bit of cheese to my salad.
