Green cabbage, okra and carrots! Easy steamed dish and a great one to satisfy a huge appetite for about 35 calories a cup. It is seasoned with celery seed, onions and herbal salt. I had two cups along with lentil soup!

That's the stuff. I buy 1 green and 1 red cabbage every week and always have stewed okra and tomatoes in the fridge. I'm big on low calorie density to get more food volume!

Gastropd, Yes! Food density/ nutritionally dense foods are the deal.! Cabbage is loaded with nutrients. I think we have all eaten a full meal and still felt a little hungry. That feels worst when you have spent all of your calories dollars for the day! 😂 food like this leave us satiated with “calorie money” left if we want it.

@Tr3vi28- sure! I like to prep my veggies first and set aside, and gather all other ingredients. You’ll want a small head of organic green cabbage (cut in large chunks omitting the hard core and loosening up the chunks by hand) ;two handfuls (cups) of okra washed and stemmed; one or two carrots sliced about 1/4 inch thick, 1/2 cup diced white onion.. Have ready 1/2 cup low sodium vegetable broth, vegetable salt seasoning, and celery seeds. The process. Place the broth in a pot (I use an instant pot), and bring broth to a simmer. Toss in onions and stir them around a bit. Add carrots, then add cabbage. I use tongs to move the veggies around similar to how you would treat a stir fry. When the cabbage is a bit tender, sprinkle as desired with celery seed and top with okra. I leave okra whole. Some may want to slice them. I continue to turn the veggies adding hot water only as needed to avoid scorching. When the veggies are almost to the consistency I want, tender and green - not mushy and brown, I place a glass lid on the pot and simmer until the okra is tender- probably 3 minutes. Remove the pot from heat immediately to avoid overcooking. This sounds like a process but it is an easy dish. Prepping and cleanup probably takes about 15 minutes and cooking 10 to 15 min. All measurements are guesses. Okra and carrots are not needed. I prefer organic veggies. Just use what is in the kitchen. Chopped green pepper dropped in with the onions are great. I didn’t have them on hand this time. If you have a question, let me know. I called this a steamed cabbage- it is more of a story fry without oil. Enjoy.

If that recipe seems intimidating, really just cut up the cabbage, place in a steamer or boil until tender (10 minutes?). Season as desired. You can’t go wrong with cabbage. The main thing is to use very little liquid and not overcook it.

Okra is almost in but unfortunately in Alabama you can only grow cabbage products in the Winter so I will mix them with something else I love to pickle them
