Inspired by GillyB I made something in between huevos rancheros and shakshuka for Eggy Wednesday, with some mushrooms instead of bread for substance. Lots of white pepper because that’s how I like my tinned tomatoes. 300 cals.

Paula it was really delicious! I never make this because my husband can’t eat eggs unless they are thoroughly beaten. He was supposed to be away with work today but got a test and trace message so is back and self isolating. Sadly I had already planned this so I went ahead 😋 and he got to have leftovers from last night’s dinner! Sending love to you x

Can he not? The positive thing is... you get them all for you. I didn’t have a single egg today and I am missing it. I eat 2 a day .

No it makes him barf! Omelette is fine as long as well mixed, and he makes lovely soufflés and quiches. Very odd. His mum is the same. Once we went for dinner at a friends house and she had put boiled eggs in the fish pie but they were hidden and it was DISASTROUS!
For this I made a tomato sauce by frying onion, garlic and a green chilli until the onions were really caramelised. I added a spoon of tomato purée and then a generous helping of cayenne pepper. Tin of plum tomatoes and even more generous with the white pepper. I made it this morning while the kids were getting breakfast. Then at lunchtime I just made a couple of holes in the sauce and dropped in the eggs, and covered it until they were cooked. I grilled the flat mushrooms. Parsley on top.
