Thank you! They were Giant Portobello mushrooms stuffed with Italian Sausage and palm rice. Topped with Marinara and Provolone.

Low Carb Stuffed Portobello Mushrooms
Filling:
1lb of Italian Sausage
(or seasoned ground beef-even lower carbs)
1 raw egg
1 package Natural Heaven Palm Rice
1 1/2 cup shredded Mozzarella Cheese
1 1/2 cup Sugar-Free Marinara
6 Large Portobellos
1. Clean mushrooms & Saute in olive oil to soften. I use a pan that can go straight to the oven.
2. Mix meat, egg, & palm rice. (This is my low carb cabbage roll mix too.)
3. Form patties of your filler and place on the underside of the mushroom caps pressing slightly down to adhere.
4. Top each one with 1/4 cup of your favorite Sugar-Free Marinara.
5. Top each with 1/4 cup of shredded cheese.
Bake at 400° for 30 minutes and check largest patty for doneness. 30-45 minutes is usually enough to cook through and brown nicely.
