Hello everyone! Happy Friday! Well, I’m getting serious on my journaling to help give me a different mindset towards food. My hubby and I didn’t watch our dietary intake during the shutdown and no-contact deliveries were super easy. Result - weight gain.

We are starting a keto plan plus low sodium & low carbs diet thrown in. What’s interesting is that some ingredients can be substituted and be keto-friendly.

One substitution was my favorite…bread. Now we make what are called Chaffles. It is cheese and egg based mixture + non-wheat flour) cooked on a waffle iron (ch=cheese & affle=waffle). Check out the many recipes on YouTube. I made my first set today to make a cheesesteak sandwich. It was delish!
