marinate in soy sauce or Tamari with ginger, garlic and a touch of honey and a squirt of lime juice. (teriyaki), Stir fry it with veggies.

Thank you so much erikaholister. I will try that. I did find a recipe for ccocnut curried tofu - that sounds pretty good too but I am attempting to add ginger *health related benefits .... so I will try your idea and also gain the advantage of additional veggies. Thanks. (Yesterday I was reading about any possible immunity gains from having CoVid --- interestingly enough ---- those people who participate in long term fasts - like erikaholister - the longer fast rejuvenate the B Cells - those cells that have been diminished in the past are revived which increases immunity --- it takes 1 to 6 months to gain any natural immunity and during that time those who had CoVid do not want to become reinfected - since you can get it again. Interesting stuff and I thought that Erikaholister would want to know that. Boosting the B Cell system through natural sources = Food.

I just posted a recipe that uses tofu..not sure of your macro count or diet restrictions. When I do cook with tofu , I make it Crispy baked tofu, it has a better texture, i can marinate it before hand to add the flavors I want it to take.

i tried the Tofu - I marinated it and I toasted it and had it with stir fry veggies and rice ... and Tofu is good - it was quite nice. I would do that again - marinating it and toasting it was a good idea. Thank you.

Brigit123 - I am searching for - easier to digest proteins and Tofu fits that requirement - soy bean curd - Tofu is good though I have no taste for any soy based milks. The Tofu marinated and toasted on top of stir fry was good ---- it would have really good with ... some sweet & sour pork... (I am just a die hard)

preheat skillet over medium heat. open tofu, throw it in the trash, turn off the stove, go-to McDonald's and buy a big mac

I agree with Erika…ginger and garlic stir fry. Soy sauce, garlic, ginger, pinch of brown sugar, sesame oil, splash of water, thicken with corn starch, mix with celery, red cabbage, green onion, water chestnuts and broccoli. Toss in your pre-seared tofu and voila.

Rick…funny. I’m not personally a tofu guy either. But have you seen the Fruity Pebbles Syrup? 🤣. Jergens, realizing you already made your meal…hope it was good. Coffee is ready.

I sometimes cut mine up and press the water out of it for half an hour or so. Then I toss it with oil and soy and roast it. Look for the Crispy Baked Tofu recipe on the Cookie and Kate site for directions

Holy Moly Mr. HK3 - look at you cook it up ... Holy Muck. I have not read back for a while so missed the comments. --- I have another small package of Tofu - my experience with tofu was good - I marinated it in soy sauce and roasted it a bit and added it to veggies -It was all good. (Though the Big Mac sounds good - I have a heck of time digesting that thing) I am writing down your recipe HK3 - sounds good to me.
