My late brother taught me how to make it more than 30 years ago. So easy -- an onion, an eggplant, a zucchini, some tomatoes and fresh garlic, salt to taste and cook in a generous amount of olive oil until it's mushy

do you cook your own polenta or buy it in a tube?

sandyeg - I make my own. Cheaper, although a little time consuming. Recipe I used was from The Joy of Cooking
