I thought about making a smoothie that included the kiwi and avocado, but they're both such lovely foods as themselves. Blueberries, kiwi, avocado toast on homemade sourdough rye, and seitan. I have no gluten issues, so I eat seitan for a protein boost

I had an egg on rye this morning! Over the weekend, for dinner, I made Chicken Tenders, Rice, Kiwi, Blueberries, strawberries and pineapple. Your post reminded me I have to make it again soon! :-)

My husband makes the bread. We almost never buy bread from the store. He's kind of taken the point on bread baking since he retired, and got into making it with sourdough not long ago. Love the flavor 😋

StormyGirl -- I make my own. My sister gave me a really easy recipe if you want it. The commercial stuff is more expensive and has more sodium than I care for

Nice meal! I like smoothies but I think I would also prefer eating the kiwi sliced and the avocado too.

Preheat oven to 350. Mix 1/4 cup nutritional yeast and 1 1/4 cups gluten in very large mixing bowl, along with whatever spices suit your fancy. (I use a bread bowl.) In another bowl or measuring cup, mix 1 1/4 cups vegetable broth or bouillon and 2 tablespoons tahini. Add liquid to dry ingredients and mix until combined. Knead for 3 or 4 minutes -- it should start to feel a little rubbery. Form into a log and wrap tightly in foil. Bake 45 minutes, flip it over and bake another 30. They sell vegan bouillon in chicken or beef flavors if you want it to taste a little meatier. I've also seasoned it like Italian sausage before. IMPORTANT TIP: clean everything well immediately after you put the seitan in the oven. The stuff will set like concrete if you wait 😉 Good luck! Let me know how it goes! 😃👍
