I am under a tremendous amount of work stress, and it's hard to put any energy into healthy food. It's survival eating right now, although I'm still trying to stick to plant based. In less than a week, I am presenting a 2-day online workshop. Five hours of content, and more than 250 people have registered. I've never done anything this big before -- not even close. I've been hitting the chocolate a bit much, but still not out of control. I'll be through it soon and hopefully get a little better on track. I keep telling myself that after this is done, I'm phoning it in until retirement!

Thank you, gzwfire! I keep telling myself I'll do an "adequate " job. If I tell myself I'll do great, it puts too much pressure on me and I get freaked out 😜

I hear you and I've been there. So far, I've never regretted doing something hard. I may not be comfortable while I'm in the midst of it, but I've never regretted trying. Even when it didn't work out "perfectly." In retrospect, the effort was always worthwhile. Deep breaths...one day at a time.

No need to cook if you're slammed at work. Just eat grapes or grab a pre-packaged salad from a grocery store or sandwich shop. Bagels are vegan provided you get the ones without cheese. Your husband can help out with dinner by heating up something in your freezer (presumably put up there for times like these!), and a side salad of sliced cucumbers with olive oil, white wine vinegar, salt & pepper is just a quick shake in a mason jar.

Thanks, JustBananas 😊 No, nothing stashed in the freezer, but a househusband who is willing to cook, and some easy, convenient things always on hand, like canned beans and frozen veggies. I might not eat as well as usual this week, but it won't be out of control. PB toast, seitan I fixed over the weekend, fruit -- I'll get through! 😃
