Nice light dinner. Quinoa, baked falafel with tahini sauce, and arugula with balsamic vinegar. Falafel was leftover from a couple of days ago. I am definitely making that recipe again!

Class is going great, CrystalJo! Thanks for asking! The falafel recipe is from The Joy of Cooking, but I baked it for 25 minutes at 375 instead of frying them. Some falafel recipes start with canned beans, but you get a better, more authentic result with beans that have been soaked, but not precooked. They say overnight to soak, but mine soaked 2 days because I was too tired to cook the first night. If bean soaking water forms bubbles, don't worry about it. Just rinse them and use them -- it won't hurt anything. I've seen people on other forums freak out about it and throw out the beans, which is just silly. I'll dig out the recipe tonight and post it here

I soak my beans in leek broth and the flavor is so, so good! Have not attempted falafel, but baking sounds doable.

The recipe: 1 and 1/4 cup dried chickpeas, soaked at least 12 hours. Drain and rinse, then chop finely in a food processor. Add 1/2 cup chopped onion, 1/4 cup packed parsley (I used Italian flat leaf), 2 chopped garlic cloves, 2 tsp cumin, 1 1/2 tsp salt (I used MUCH less, but this is what the recipe says. Adjust for your taste and sodium goal), 1/2 tsp each coriander, baking soda, and turmeric, 1/4 tsp ground red pepper. Process until coarsely pureed. Transfer into a bowl and mix in 2 tablespoons flour. Form into 12 patties and place on a baking pan lined with parchment paper, or whatever other nonstick baking arrangement you have. Let stand for 15 minutes. Bake at 375 for 20 minutes. Top with a tahini sauce
