I really wanted some broccoli and the flavours here were a perfect match . Definitely going onto my regular list of dishes

Ingredients - broccoli ( as much you want , low carb , low calorie) - Garlic (2 cloves) - Parmesan cheese (1 tbsp) - Lemon (zest and a little juice to your taste) - 1 tbsp olive oil - Halloumi (40-50g) or three slices - Pine nuts - Feta cheese ( 20g) Cut broccoli florets and slice in half if too big . Preheat oven to 200 degrees F Steam broccoli for 6 mins to soften stems Place broccoli in bowl with salt, pepper , minced glove of garlic and 1 tbsp olive oil and mix. Add to baking tray and put in oven for 12 mins until cooked through and slightly charred on the outside Meanwhile heat pine nuts mixed with sliced cloves of garlic until pine nuts take on a bit of colour (2 mins) then set aside Just before broccoli is ready , cook halloumi Tip broccoli, garlic , pine nuts back into the bowl then add the Parmesan , zest of the lemon, tiny bit of lemon juice and mix. Spoon onto plate then sprinkle feta and add halloumi I might have missed something but hopefully nothing too important

Trying to remember what I did and what I used took longer than the typing. Thank you for your kind words, I really enjoy the creating as much as the eating. It’s not always a success but I always enjoy the experimentation.
