Gone Fishin' So nice to have the full experience from catching fish to preparing a wonderful dinner. I made oven baked parmesan crusted bluegill, wild and white rice, tri-colored carrots with parsley butter and homemade black bean, red pepper, onion, lime and peach salsa. It was scrumptious! No Bernadaud china to play a part here. No need. After all, you can't eat the plates, right? ;)

What Shirfleur said... My father taught me how to fillet a bass. It is tricky because there is not a lot of meat on a bass to begin with. He only really likes fried fish fillets, hence my narrow skill set.

Thanks everyone! It was almost as much fun catching them as enjoying that meal. Gwzfire these oven baked taste alot like fried. I love fried fish too but this was healthier.

losing2win1, I agree with you! Oven baked or broiled is WAY healthier. but my dad isn't having it. ha ha ha. Did you scale it?

gwzfire,you may have to serve your dad oven baked and tell him you fried it. ha ha. The fish was filleted and the skin was discarded. The pieces were weighed and I portioned before coating them. I shook off any excess coating before baking, used the baking dish first as a melted butter dipping bowl to coat the fish before breading. This meant less clean up no additional grease for the baking pan.
