Low sugar Sure gel 

I have a plum tree but had to pick my plums early cuz birds were getting them, no matter what I tried. I have them on counter to soften but unfortunately they won't get sweeter.. 

Erq I'm doing low sugar too, although I don't can. It's incredible how out taste buds love sugar! The only time I need it is with cranberries. Diana, maybe try a paper bag to sweeten/ripen them? i don't know if it works with plums but it does with bananas.

Hazel, from what I read, you are able to soften plums by using a paper bag or on counter but they won't get any sweeter as they ripen. 😔 

Oh yummy! I’m going to be canning peach mango and strawberry white grape on Saturday. I don’t use sure-gel anymore either. Just cook it longer and add a nice bit of lemon juice to thicken it without a ton of sugar. 

I want some now!!! :-P

Oh! Plum jam. I just got done making strawberry rhubarb, plum will be next. Thanks for the inspiration. 

I have strawberries but unfortunately I cannot grow rhubarb in Alabama it just will not take I miss that a lot from Wisconsin 

Ridemariel. I did use fresh rhubarb but I also saw it in the frozen food section at my store. Would that be available to you?  

I don’t have wild plums, but will just use regular. I just freezer can, not pressure can so I just do small batches and end up giving some away to friends. 

I so agree the only thing that saves me is I have a whole Orchid of wild plum the birds take more than their share Next step will be saving fig they seem to like those very well and blackberry
