I also can’t have gluten. This was easy and delicious. I sprayed the pan with olive oil, then sprinkled with Parmesan cheese. Put in chopped spinach, artichoke, feta. Mixed 9 eggs with milk, pepper, garlic powder, and sun dried tomatoes. Poured it in top and added more Parmesan cheese. I used a 9 inch square pan, but it works great in a pie plate. 350 degrees for 40 min. I don’t measure. I just eyeball everything.

Thanks friends. I only like eggs if I combine them with a bunch of my favorite things. If I had mushrooms I would have added them as well. I think the game changer was the sun dried tomatoes.
