My homemade VATA - Calming Soup. First attempt making this soup. It was a lot of work but well worth the time I invested. Just delicious! With snow coming tomorrow, this will really hit the spot a second time. :) Low in calories, high in fiber and rich in healthful benefits. Made with butternut squash, carrots, onion, tumeric, garlic, ginger, cumin, cinnamon, and cloves. Had no ghee or coconut milk so I substituted butter and vanilla lowfat milk. Even with those substitutions, a ladle of soup was only 93 calories with less than 3 grams of fat and not very high in sodium.
