Serious question, how do you all find time to make these amazing looking meals? I work 45 to 65 hours a week have several pets to take care of along with the household and a husband. No kids due to cancer and all of that fun stuff. With my back issues and stuff like that I don't have time in the morning to meal prep. My morning is spent trying to deal with the pain while getting ready for work. When I get home I'm exhausted from the day have to make some kind of dinner usually and take care of my pets and then it's about time to go to bed again. I just don't know how to make a balanced breakfast and lunch when I have no time. I often work six days a week on top of everything else. Any tips or suggestions on how to do this? To do low carb it seems like there needs to be a lot more prep. That's what I don't know how to do.
I might also add, I've never been a big breakfast person unless we're having breakfast for dinner. I only eat breakfast cuz my husband's diabetic and if we're together in the morning he needs to eat so I eat with him. I do a lot of intermittent fasting because I don't like to eat breakfast. Here lately I've been grabbing those Atkins bars. Oddly enough, I seem to be more hungry after I eat one of those then I would be if I hadn't eaten anything at all until noon. Does that make sense? I feel like I'm at a loss as to what to do at this point. I will still keep fighting and doing everything I can but I could really use some help, tips, and advice.

I know how hard it was for me when I was working hours like that. It can be overwhelming. Here are some suggestions -- I don't know how practical they are, but I'm offering them up: 1) Cook on the weekends. My mom taught me this because she worked full time, and it was hard to get dinner on the table. You can roast chicken to reheat; make meatloaves and freeze them; roast a boneless turkey breast -- use it for one or two meals and freeze; make hearty soups and turkey chili; make stews. Often I make a meal with the idea that it can be converted into something else: Turkey breast becomes turkey salad; grilled salmon becomes salmon salad. And choose some convenience meals that work for you. Kevin's All Natural is really good. And I agree with Diannefairy -- in the old days Lean Cuisine was kind of sad. But they've really improved them, and I watch the sales and stock up on the ones I like. I use them for lunch all the time, often with a fruit snack bowl or leftover veggies from dinner the night before. Like Diannefairy, I'm also doing about 1500 calories a day, with a slow but steady weight loss. I do get hungry sometimes -- but I keep things on hand like apples, fruit snack bowls (peaches and pineapple), Thin Stackers rice cakes and reduced fat cheese, and most recently the Sargento Balanced Breaks. I eat three meals and two snacks daily, and I think spreading my calories across the day really helps me. I strongly recommend that you try to retrain yourself to eat breakfast -- and not a "nutrition bar" I make oatmeal in advance and reheat it. I keep chicken breakfast sausages in the freezer in wrapped packs of 3 links and microwave them. Sometimes I get sliced turkey and have that and some fruit for breakfast. Truly -- it helps to start off the day with some lean protein or complex carbs. Good luck.

Oh yes... I should have mentioned. When I was really busy and taking care of my mom while working, I had Freshly meals delivered. I usually got 4 meals each week and used some for lunch, some for dinner. It really helped, and the food was pretty good.
