This one is for all of my food prep peeps. If you're like me, you're so sick of chicken breasts, but making them every week anyway! Today I did something different and it turned out great! The best part is it was super easy and delicious. I put lemon slices in a 13 x 9 x 2 pan and put in just enough water to cover the bottom of the pan. I placed sliced garlic on each lemon slice followed by kosher salt and freshly ground pepper. I put boneless chicken breasts atop the lemon and put salt and pepper on top of the chicken breasts. Covered it and put it in a 375 degree oven and ignored it for 40 minutes. Took it out of the oven and let it stay covered for an additional 10 minutes. Was going to check it with my meat thermometer but they were falling apart into tender chunks. It was so good. Just enough flavor not to be boring old bland chicken, but simple enough that it won't overpower the flavors of whatever recipes I decide to make this week. Good that it was so easy as the rest of dinner required a lot of work. Pesto over gluten free fettuccine and zucchini fritters. We did a taste test and I fried batches of fritters and made an air fried batch as well. We all preferred the air fried. Yay!

I also do this with fish but halve the cooking time.
