Oh my gosh I just had stuffed tomatoes, but I did a breakfast variation! I put eggs, egg whites, and cheese in mine! Topped it with yogurt it was actually really good. I'd love to have the recipe for this!

Angelicalovescake, the chicken salad is simple. Any left over chicken, canned, or boiled. Shred or cut the chicken, about 1/4 cup for 1 med-lg tomato.
Heat chicken in microwave until warm, about 1 minute. Sprinkle with dill weed, garlic powder, & onion powder. Add about 1 tablespoon of grated cheese and about 1 tablespoon mayonnaise. Stir until well combined. Chill in refrigerator while you hallow out the tomato.
Stuff tomato with chicken salad and enjoy.
I do not use salt or black pepper. I get the salt from the mayonnaise or other foods; since omitting the extra salt from my foods, my blood pressure is a steady 110/68 & before my blood pressure (with medication) was 142/94 up or down!

I just posted the recipe for the chicken salad. For the stuffed cucumbers, use the same recipe for the chicken salad. Take a cucumber cut it in half lengthwise. Using a spoon scrape the seeds out, pat dry with a paper towel and fill with the chicken salad. Eat and enjoy!
I did use a mini sweet pepper in the chicken salad. I use what I have on hand & substitute where needed! The original recipe can be found at: realbalanced.com Bacon Ranch Chicken Salad Cucumber Boats.
I omitted 1/2 the recipe to conserve calories and fat levels.
