Here is the basic recipe: http://www.thehungryelephant.ca/2019/07/13/keto-pizza-crust-no-eggs-cheese/ I ended up needing to increase the whey to 1-2/3 cup so that the dough wouldn’t be a runny, added yeast to the warm water (with a pinch of sugar) to make it more bready flavored, and a dash of psyllium husk to give it a more chewy texture. Dough will be runny and not doughy if that makes sense. But it does rise. Basic crust ends up being 29g of protein / 360 calories per 1/8th crust.

Thank you! I’ve been craving fluffy pizza - with celiac disease my only options have been thin crust (no hate - I just need something different). Plus I need high protein for my gym goals - after having protein pancakes that were accidentally celiac friendly, I was like - WHEY cool. Whey protein rises and with some psyllium husk powder (or tapioca) it’s chewy too (just like gluten bread that I can’t have because of celiac). And that’s how we got to whey protein crust lol.

Plus it’s definitely more filling if that makes sense. I can easily eat an entire thin crust pizza if I’m hungry enough normally (but alas self control). But because of the protein and almond flour, I feel satisfied after 1-2 slices if that says anything.

345 calories 1/8th of JUST the crust. About 450 calories 1/8th pizza loaded up depending on what you add. I tried to add this to FatSecret recipes (easy add to the food diary + cooking instructions) so you might be able to find this in that section (the title I called it is earlier in the comments).

Again, my goal is high protein. Because of the almond flour and whey it’s more filling than normal pizza and has significantly more protein. You could probably sub out the almond flour for cauliflower rice to make this lower calories and keep it high protein.

If you do swap the almond flour out for cauliflower rice, I would add reduce/remove the oil used. That would reduce the calories per slice by about 127 calories and you would still have 28 g of protein per slice. Making the updated calories per slice 218 + toppings. I’ll have to do a test batch and see. 👍

*Edit: 25 G protein with cauliflower rice instead of almond flour.
