I went way over my calories, but today in the gym I had more energy and felt stronger. I was able to lift heavier weight. I'm thinking maybe I need to bump my calories up some. It could be a combination of needing to bump calories up and eat a little more fat intake, because usually my grams of fat is 60 something or less on average.

I vary my daily calories based on my activity level (it can also be good for your metabolism to switch up when you eat, how you are getting your calories and what your calorie count is, routine is important but so are variations).

Your right. Some days I'm not as hungry and I'll eat 2100 or 2200 calories. My calories vary day to day, but I don't go over too often or too much. I try to hit my calorie goal, but some times it's hard.

Definitely! Eating too few or too many calories isn’t ideal. The sweet spot is best for energy and overall health/goals.

100% I've been eating around 1200cals per day and have DEFINITELY felt my strength reduced by some amount in the gym. It's a neat trick having muscle mass while also appearing lean (low body fat).
