My previous craving for Beef Brisket was full-filled, with some really tasty Brisket I got from a 'trendy' Butcher shop. I paid a hefty price for it, but dang was it ever good, and not just because I am a decent cook. This time I went there, again with Brisket on my mind, and this time I read the sign above it... 'Pasture fed Beef', and yep, is pricey, but so flavourful. I slow & low Oven-Braised a 2.5kg chunk for 5 hours, and it came out stupid tender, as did the last one. It sat covered in the fridge overnight, and I had my first real feed of it for breakie today... I did try a taster last might, more to see how tender it was... it needs nothing, but I could eat a few hundred grams of it in a sitting, it is that yummy and tender. Alas I am trying to limit my meal intake to 100g of each type of meat, since I am going Carnivore diet for a while... but mornings like this I kinda regret my commitment lolol... 100g of cubed Pork Tenderlion is up next.
