Food experiment of the morning: portobello mushroom "bacon." It's not bacon, but it's not bad. Taking a long weekend off after a rough couple of weeks. Plan to play in the kitchen a bit. Just brewed tea to start growing a new kombucha scoby

How do you grow a scoby. Is there a good website I can look at. I am getting into fermenting but have only done veggies so far. I would like to try kombucha as well

It really is delicious, OTB. I probably could have made it more bacon-like by frying it, but it was easier and less messy to bake. It's just mushrooms tossed in a mixture of olive oil, soy sauce, maple syrup and liquid smoke. Got it off the It Doesn't Taste Like Chicken website. She also has a TVP breakfast sausage recipe I want to try

liv -- I've done it a couple of times. I start with a bottle of plain, unflavored kombucha from the store. I get GT's brand because I know their cultures are live. I make sweet tea just like I'm making regular kombucha, dump the bottle of kombucha in it, cover it with a cloth, and let it sit for however many weeks it takes to grow one thick enough. There are plenty of websites and YouTube videos with instructions

Thanks wyo. I was reading about it after posting. It looks like it has some sugar so I will wait till that is part of my diet again. But I am very intrigued. Enjoying my fermented veggies a lot. Your mushrooms looks delicious btw.

The thing about kombucha, liv, is the scoby eats a fair amount of the sugar, so by the time you're done, an 8 oz. glass only has about 2 teaspoons worth. I've been getting too wild with sugar lately, but when I'm on track, I try to keep it below the 6 teaspoons recommended by the WHO. As for the bacon...it was all I could do not to eat the entire tray 😂 My husband and I decided it would make great BLTs

The mushrooms look delicious! I love bacon but never have it at home and only one in awhile when I go out for breakfast

I feel as you do. I was in kitchen most of day yesterday, preparing and prepping bone broth I made and today I'm making recipes with the figs from our tree. We got a ton this year! 💜💜

Oh the figs sound lovely, Diana! I used to like making stock -- is there really a difference between stock and bone broth? One year I managed to snag something like 8 turkey carcasses from the office Christmas party and made I think 3 or 4 gallons of stock. We ate a lot of soup that winter 😂

Thanks, FoodyDuty 😊 The vegan cooking day continues. I made Swedish meatballs and have cashews soaking to make gravy for them tonight. Roasted a squash for the chili I'm taking to the office cook-off Tuesday. Now I'm steaming my Italian meatballs for the freezer. Made a pot of chai and enjoying that for a few. Next on the agenda is a chocolate cake. Cooking truly is my way to unwind, and I've been pretty stressed lately. And outside, we have a beautiful blanket of snow. It's a good day!

Wow, 😲 Writingwyo you already have snow it's still 74° here where I'm living in Kentucky. Squash 🌶️ chili sounds really neat I have some butternut squash soup to try in to fridge for later that a friend brought me to work. Never had any looking forward to try something new. Hope you have fun in the kitchen and that it helps you to destress a bit for everyday life 😊.
