Love beets! Note to self: add to grocery list, been too long! 

Windy, I was trying to eat more colors. I remember reading an article many moons ago about high nutrient foods that included beets, sardines, soy beans, and dark leafy greens. I used to love cooking with beet greens in California, but unfortunately the local ones all seem to arrive denuded. 

Definitely, Hippie, the more colorful the more nutrients. In fact I put myself on a Candida diet some years back, and in a nutshell idea was if it was white it was eliminated. Of course this is not a long term diet, just a cleanse really. But boy I lost weight on it! I have a very nice - but very expensive - natural food market here that sells bunches of fresh beets with the greens, but Ive never used them. Do you cook/serve them like any other green? 

My 3 favorite vegetables!!!! Great looking meal. 

Windy Day -- yes, to using beet greens like any other. They're fantastic cooked or as a salad. I've also learned you can eat radish greens and cauliflower leaves. So no need to waste those!
