Haven't tracked religiously the past few days -- a lot of eating out. But I'm doing a pretty good job of balancing meals "out" with very controlled meals "in." Last night made amazing non-fried "lazy person's" eggplant parm. This recipe came through my Facebook feed, so I gave it a try. Huge success.
