My recipes never get shared -- I think because I don't include photos. So I want to share two things I now make that may solve some cravings for other people: 1) Gravy. I miss gravy when I eat boneless chicken breast or turkey tenderloins. So now I make my own: Slice and caramelize a sweet onion in a large pot with 2 TBSP of olive oil and about 1/4 cup low-sodium chicken broth. Cook until it has some crispy brown spots and all is well cooked. Transfer to your blender and add 8 oz chicken broth; pinches of salt, pepper, dry thyme, sage & rosemary. Blend until smooth -- til all the dried herbs are completely emulsified. Now transfer to a small sauce pan and simmer til it bubbles and begins to cook down. Make a slurry of 2 tsp of corn starch in cold water and stir into gravy. Continue to cook again till bubbles a while. Makes about 5-6 servings. 2) Fried potatoes. Really miss crispy fried potatoes. But now with an air fryer I can do this: Bake 2 medium potatoes til soft and then put in fridge overnight. Next day, cut potatoes in half lengthwise, then cut each half into little half moons. Toss in a ziplock with a couple splashes of olive oil. Then spread on air fryer tray and sprinkle with a savory season salt. Cook for about 6 minutes at 425-450. Toss the potatoes again and cook another 3-4 minutes. These are really good, and the very small pieces of potatoes get crunchy. I don't do this very often because I stay away from potatoes, but when you have a taste for them, this is the way to go!
