Sarah2645: Mostly homemade (the tortilla is store bought). I used some leftover hummus I prepped for my lunches and spread it on a tortilla with my favorite hot sauce (California Pepper Plant) and a little nutritional yeast and cooked it on a non-stick pan. It came out good, my gf even requested I make some for her b-day party this weekend.

Your diet sounds surprisingly similar to WholeFoodNuts diet that she has worked out after years of experimenting. Though I think she does still eat small amounts of meat to flavor things and I know she eats eggs! LOL 🙋🏻Doobrie is Vegan, but is essentially Keto I believe. 🤷🏻‍♀️I’m impressed with anyone who can get that much fiber into their diet during the day. That’s been my big push with my carbs, as an insulin resistant diabetic/hypoglycemic carbs don’t do me favors so the more fiber I keep coming in with them, the better off I am. 💁🏻‍♀️You sound like you have a great handle on this!

not judging by any means. Just asking a queation? looks yummy and i am sure tastes wonderful. But how many carbs are in that? Myself if I ate that (and I have) I would gain weight immediately. The more carbs I eat the more I want.

Smprowett: I'm eating a whole foods, plants based diet. I am doing this based on my experience in my last successful weight loss journey and dietary recommendations from NutritionFacts.org. I played around a bit before officially going into the weight loss mode and this is working for me pretty well. I love all the fiber in this diet! Some days I am simply not hungry enough to eat all 3 meals. The best part is that since I cut cheese out, I'm getting fewer and fewer pimples everyday!

Terri.vian: I'm not offended at all. I'm not interested in counting macros nearly as much as minimizing the processed foods (including oil) and eating plenty of fiber. I'm eating whole foods, plants based. My diet ends up 65-75% carbohydrates. This particular meal had 108 g Carbs, 27 grams of fiber and totaled to about 680 calories. I'm not at all hungry and some days I feel like I have to skip meals.

Arugula!! My favorite!! Have you tried an arugula casadilla? So easy! Start with two flour tortillas. Put cheese on one, whatever type you prefer, I like cheddar or Mexican mix. Then add a ton of arugula (if you crush it into a type of ball with you hands it is easy to get more on). Add more cheese on top of arugula then the other tortilla. cook on 400 degrees for five minutes take out, use spatula to flip put bake in for another five minutes. Take out and cut into 1/4s!!! So good!

Peggybratcher: That sounds great, it's always important to get you greens in! I bet it tastes great with peppery flavor of the arugula.
