Poison1vy.. Eel used to be a favorite of mine too! And crisp salmon skins. There are days I still crave thise kinds of things. I need to find a good vegan recipe to mimic eel. That would be awesome.

Minus the soy sauce, of course. Isn't there a substitute "soy sauce"? Also, there's others that use tofu, if mushrooms aren't suitable.

Yeah the substitute to soy sauce is tamari and coconut aminos. Both taste exactly like soy sauce but weaker.
