I made the Italian wedding soup last night. It took 3 hours! Rolling 2.5 lbs of tiny meatballs takes forever!
My calories were low, but it felt like A LOT! Maybe I miss calculated. My eating window was not as small as usual and it felt weird. The soup was not ready when dinner was. There was 1 hour to 1.5 hours between meal and soup. I should have skipped my plans for dinner and just had soup, but oh well. I am looking forward to a simple dinner tonight.
