Oh lovely figure 8, there you are! Finally into the 180s! I haven't seen that range of numbers in so many years. I am giddy.

We drove down to the farmer's market yesterday, so I'm looking forward to baking sweet potato cubes and crispy okra... this time with as little oil as possible. The last veggies we got at Whole Foods molded too quickly... just 3 days after purchase. I wish we had daily open-air markets in our neighborhood, like they do in France. I'd walk down to get something fresh for dinner every day.

I'm going to bump up my step aerobics time to 20 minutes if possible. I can do crunches better if I put a pillow under my lower back too. Maybe that's cheating, but it was too uncomfortable otherwise.

Thanks, Kimbur! Sweet potato cubes are so ridiculously easy they practically make themselves. Peel 3 or 4 taters (that should give you plenty of leftovers), cut into big bite-sized cubes, roll them around in a couple of Tbsps olive oil, sprinkle a little sea salt on 'em, then roast on a cookie sheet in a 425 degree oven for about 30 minutes total. About mid-way thru roasting, flip 'em around to brown evenly. Keep an eye on them after about 20 minutes in case your oven browns things quicker. Last time I had a little too much oil, so I'm going to try spraying them with olive-oil Pam, which should be a lot fewer calories. I was happy to learn sweet potatoes are really good for you -- sans the butter, marshmallows and brown sugar.

Oh, you should try the okra too -- same basic cooking directions, except use baby okra because they're much more tender than the big ones. They aren't slimy this way... almost a little crispy, but without all that crust that fried okra has. Delish! I actually put both the taters and okra on one baking sheet together and it's done about the same time.

Hi, thanks for wanting to be my buddy! 180's that's awesome! I am also a big fan of the sweet potatoe. I got a super good recipe from that Guy Fieri that does the "Diner, drive-ins,and dives" show on the food network. Umm, but okra, the word itself is a touch scary to me,lol, to be honest. Is that the stuff that looks like little cabbages, or is that something else? See, I'm not even sure what it is, lol. That's sad :)

I don't much care for no "okrie". My grandparents tried to get me to like it forever. Too mushy for my taste. However, the sweet 'taters sound right tasty.

Hunny, those little cabbages are probably brussels sprouts. I think okra is much tastier than the sprouts. Kimbur, eatcher okrie or ye get NO dessert, young 'un!!!

Hey, don't dis the Brussels sprouts! They are an excellent source of vitamins, minerals and fiber. Rachel Ray steams them and dresses them with a "hot pickle" dressing of vinegar, honey, and a little pickling spice. It the low fat way to make them. Coco, I'm glad to see you're appreciating the our friend the vegetables. Okra is good too. I like in a good Jambalaya stew.

YEAH! Brussel sprouts, that's right, I'm such a blond. Oh, hey, no offense to blonds out there, but I'm the reason we all have a bad name. I'd forget my name if my husband didn't insist I wear a name tag, LOL! Kidding!
