ahhhh that looks amazing. I was Vegan for a while and considering going back. Been adding mostly raw vegan to my diet but still eating chicken, egg, and tuna.

Vicki, I think a vegan diet can be really healthy. I do eat plenty of vegan meals. But I don't try to keep all my food strictly vegan either. If I'm eating food prepared by others I don't worry if there's egg in it or beef broth, etc. I also eat chicken and tuna at home because they are a good low fat source of protein and it's prepared by me so it stays low fat. My wife and kids are vegetarian, so while they don't eat the chicken or tuna they do eat plenty of eggs, milk, and cheese. 2 out of 3 I avoid anyway because I'm lactose intolerant. My doctor told me about a relatively rare case where a vegan patient had super high cholesterol levels because she ate a lot of food fried in avocado oil thinking it was okay because it was "good" oil. So I'm focusing more on limiting my oil intake and adding fiber rather than just lower calories. So far its been a effective change.

When you consider going vegan just do a little research. There are some foods that require heat to release their nutrients for use and others whose nutrients are destroyed with the application of heat. Good to know the difference
