Welcoming fall with a pumpkin spice smoothie! Soymilk, pumpkin, banana, tofu, oatgurt and pumpkin pie spice. Didn't quite nail it down with this first attempt -- next time, I'll skip the non-dairy yogurt, add more pumpkin, and splurge on a splash of maple syrup in it. Feel like I'm getting back to my normal routine -- grain, bean, and kale salad for lunch, fruits and veggies for snacks. (Although... there was a small chocolate turtle in today's nibblings from my boss's candy bowl...) Weight seems to be coming down to before-all-that-traveling level. Have to save some room, as my husband is making pizza tonight. I have cashews soaking to make homemade vegan mozzarella for mine. Leaving work early to go hiking -- the aspens just glow right now. I love black beans, too, Morticia 😋 That's actually black rice in this pic, though. An experiment. Liked it well enough, but it didn't really taste any different than brown, and it was spendy, so not planning on buying it again
