Another great brunch: pan fried chicken breast, sauteed green beans and zucchini, nopales with mushrooms, fried plantain, toast and a lot of coffee.

After two straight days of giant portions of caldo de res, a reduction in weight this morning was very welcome.

Also rode 54 minutes, 11.18 miles, burning 410 calories.

I need to go check out those nopales. Wish my husband wasn't so picky(recent type 2 dx); read that nopales can help with regulating blood sugar levels.

Thanks for all the comments. Yes, it tasted great and my weight didn't go up from it, even though it was another huge plate. You know she sometimes uses canola oil, I know the plantain she sauteed in Imperial margerine I think. Whatever, I ain't gonna complain. Recently somebody took me to task for being lazy and not cooking, heck, if your girlfriend is a great cook and supports your dieting efforts, why rock the boat? As far as the nopales go, it is correct that they are really good for diabetics. I would suggest getting one of the already prepped bags where they are sliced up and just try them sauteed. Plus there are recipes online galore. My whole thing was to try to stop my prediabetes from going T2, thanks in part to good food choices like nopales and other veggies, my numbers are great now!
