Absolutely nothing wrong with real butter in moderation. It's the butter substitutes and margarines that are terrible for you. Your liver cant process that chemical crap and so it stores all that toxic fat in itself ... and there you are ... fatty liver disease. Not saying that is the only thing that contributes to FLD but all the experts are telling us real dairy fat is not bad for us in moderation it even does not contribute to high cholesterol as previously thought. ... MODERATE SERVINGS. Good choice on the KerryGold ... much better than USA butter in terms of additives and preservatives.

Reverse searing is when you cook it first, then sear it, whereas traditional searing happens first, then cook.

I just read a report that it's not sugar consumption that causes Diabetes. It's the high fat diets without enough exercise.

Chiming in on the diabetes report. Body fat is what causes the body to build a tolerance to insulin. Fat is created in the body to store unused carbs and calories. This includes unchecked fats and carbs including sugar. The report is worded funny to confuse people into thinking sugar doesn't cause diabetes. In reality 1 can of soda a day increases your chances of diabetes by 60% and is correlated to diabetes alongside poor diet and exercise. The best time to eat your sugars or simple carbs are pre and post workout. Although I prefer fat as an energy source.

Good catch, Francisco. Body fat and dietary fat aren't the same thing and the sugar/carb industry makes a killing equivocating the two.
