Yesterday’s dinner: a 5 ounce ribeye steak. Not even half an inch thick.
I had good luck with a pair of really thin steaks once before, but these were medium well inside, and not nicely seared on the outside. They’d need very high heat to be nice inside, and well seared outside. Thicker steaks are easier!
