Sometimes I just need to make myself a little treat plate for dinner: Icelandic rye bread, extra sharp cheddar, pecans, and dates. Calorie dense, but so satisfying

Aw that is just perfection --- where did you ever find the Icelandic rye bread --- I search the markets for that stuff and every time I ever see it I buy it ... I just loooove that bread. What a nice plate.

@buenitabishop -- thanks for stopping by! 😁 @erikahollister -- I always feel like I'm eating a fancy restaurant appetizer plate when I fix this. Everything on it goes so well with everything else that I can mix and match pairing up the flavors @Jergens123 -- I bake my own with the recipe from the King Arthur Flour website. I did finally spring for the Pullman pan from them, but I've also baked it in my largest bread pan and covered it with foil

For those who haven't tried it, the Icelandic rye is mildly sweet, so it's not a typical rye bread, and there are no caraway seeds. The recipe I have uses honey and molasses. It's also leavened with baking powder instead of yeast

But the flour, the rye, is just normal I assume. I cannot get that brand here hence me asking. In stores they love to sell German rye, which is good, but I love Scandinavian rye. So that nice colour is from Molasses

If you have a web link or source name for the recipe you might share it here. Seems like a few of us might be interested in trying it.

The recipe was easy to find on the King Arthur flour website. And they had loads of other interesting recipes

liv001 - yep, just normal rye, whatever you can get. We use a dark rye we got from Amazon
