Hmm Hooked on Brisket... took me 1 1/2 hours to locate a Beef Brisket, so I did a spice rub, and used 2 cups of Chicken Broth and 1 of Beef Broth together, and mixed in a bunch of pickling spices for it to braise in. The slab 'O' Beef weighs in at 3.5kgs.. which cost a pretty Penny... okay a LOT of pretty Pennies. It is now in the oven in a covered Roaster @135c... should be ready in about 7 hours, @2 hours per KG... will be checking it in about 6 hours though, don't want it turning to mush. I was going to make some Grey Corned Beef with half of it, but sounds like too much work, and waiting. This is why I used pickling spice in the braising liquid, so hopefully the Brisket, will pick up some of the flavours.

50g Roast Beef with a drizzle of Tajin Sauce, on 2 pieces of H/M Keto Bread, and 100g of Greek Yogurt for breakie. Not really into eating, but trying to keep the time restricted regimen intact. I considered fasting longer, but when I feel down, not eating will take me further down.

BP 115/72... PR 75
Lost an elder this weekend that was very close and helped raise me. Just found out about it last night, so am surprised my BP is still low. He was 90, which is continued proof that our family genetics give us long lives, no matter what the lifestyle... and his was not a healthy one. It took him having a week long silent heart attack, before my Aunt changed the way they ate. I am glad I got to hang out with him when he was still able, and resilient. My last memory was the look on his face when I popped 5 straight shots, into the center target with his high-powered, pellet hand gun... nobody in the family was as accurate a shot as he was... except me ;) lots of good memories growing up as their '6th child'. I am also the keeper of the family heritage records... these are the entries I hate making.
Gonna take today a bit slow.

Taco salad, without the Corn chips, as much as I love em crumbled into a Taco Salad, too many carbs right now.

The Grocer had some garlicky-herb type cheddar cheese for sale, so am using that in the 3 ingredient Keto Bread stuff I like. Smells really good, just waiting on it to cool so I can cut it up... I use a Pizza wheel... and have a wee taster... I also minced up a fresh Red Thai Pepper and sprinkled it over top, so that will add a little giddyup.
Update: just tried a piece and VERY yummy, could use a bit more giddyup though.
