Best diet food discovery: Mi Rancho Thintastic Corn Tortillas! 35 calories each and so delicious. So last week I made tacos from leftover chicken breast in mole sauce, with a sprinkling of shredded cheese. Really satisfied my Mexican food craving. Thank goodness! It's a hard craving to manage, at least for me.
I've also become really attached to steamed cauliflower. I had tried cauliflower rice, and I didn't like it at all. But when I just steamed cauliflower -- it gets a really buttery flavor and gets soft. I just put curry or meatballs or whatever I'm eating as my protein right on top of the cauliflower, and I'm quite happy with it and don't miss the rice or potatoes.

So I'm patting myself on the back because even though I was totally undisciplined Friday night and Saturday, I got right back on my plan by Sunday -- and today I did really well. I'm in (or very close to) the "low" range for cholesterol, fat and carbs in my diet, and that feels really good. Plus I am getting all the fiber in as well. I think I can do this, so long as I don't expect rapid weight loss. I have to satisfy myself with slow, steady loss and with internalizing the diet guidelines I've set for myself for the long-term. If I can do that, then I think there's hope that I can keep the weight off this time. I hope so... I'm getting too old to do this all over again and again and again...

I'm honestly amazed at how much I can eat by weighing & measuring everything and by filling out my plate with veggies. But it's a hard balance to strike: Today my calorie count was fine. My fiber was right on target -- or will be when I have my fruit for dessert. And my carbs were good -- but what made my carbs low was eating a very high protein breakfast, which also meant higher total cholesterol than I would like on the day. I have to remember that breakfast needs to be high fiber, like oatmeal or cheerios. It it's high animal protein, then I have to reduce the animal protein I eat at lunch and dinner. I'm sure after a few weeks I'll get into routines and I won't have to chat about it so much. LOL.

I'm sort of OK with weighing the same thing I did in March -- because in the interim from vacationing, my weight went back up to 211, so now I've gotten it back down again. I'll weigh in again at the end of the month. Hoping my weight will drop some. Based on my numbers, I'm burning 15-1800 calories more than I'm eating -- so you would think I would lose some weight. Maybe it just takes a while for my body to adjust to all this exercise!I have reasonable goals: Would like to lose 4 pounds per months for the next 16 months. That would bring me down to 140, which is exactly where I should be. I'm particularly eager to be substantially lighter by October 2024, when I go to Spain again. I think I could tolerate all that walking better if I weighed less.
