Back again after a very long absence that has resulted in gaining, not losing. Here's what happened: A few days after my last journal entry, I was diagnosed with a bowel obstruction, and ended up in the hospital with an NG tube for 5 days, with many days recovery after that. Once I felt better, I had to go for a breast biopsy (no problem), but a few days later, I developed COVID, which I'm pretty sure I caught in the waiting room at the hospital when I went for the biopsy. The combination of all that really threw me -- and I've had a rally hard time getting past all of it. I had some lasting COVID symptoms -- some still hanging around. Meanwhile, I took on a very demanding contract, so as I have done in the past, I put getting the job done ahead of getting thin. So, here I am again. Could this possibly be the last time? P.S. I've also put my dog Nilla on a diet as well. But she only has to lose 2 pounds.

I see so many engaging photos of people's meals. I need to remember to take one of mine. Last night for dinner and again today at lunch -- homemade (sort of) chicken mole. I brown a pound of boneless, skinless chicken thighs in a skillet (seasoned with Borsari season salt). Meanwhile, in another skillet, I saute sweet peppers and onions til soft. Once the thighs are browned, I add them to the skillet with the veg, then add a jar of 365 mole negro simmer sauce. Toss so the chicken is fully coated with the sauce and the veg, then simmer for 20 minutes. It's so so yummy -- makes about 3 nice sized meals. I always weigh my portions, and one pound of chicken thighs raw usually makes about 3 4.5 ounce servings cooked.

I serve this with 1/2 cup cooked basmati brown rice. It's really delicious and very little work.

So I'm back -- after two weeks with my family here from Spain. No way I could diet my way through that. But I am proud of myself for making a number of really good choices in the midst of the gluttony, and sad I couldn't keep things completely under control. My family eats A LOT. So long as there is food on the table, they will continue to eat. Example: After a very big meal, the mom looks at the 2 pieces of apple pie left in the pan and says: We should just finish this up. I said: No, let's save it for tomorrow's dessert. See what I mean?

The amount of the food they consume is kind of staggering to me. It's been like this forever. Years ago, I cooked spaghetti with meat sauce for them. I followed my mom's formula: 2 ounces of dry spaghetti per person, plus an extra 4 ounces for every 5-6 people. I cooked a full pound of spaghetti -- and still I had to get up in the middle of dinner and boil another pot of spaghetti because we ran out!

Now, I have to get myself back on track.
